Klariti
Klariti: one view of a venue’s numbers
Klariti is one view of a venue’s numbers: supplier invoices, POS sales, stocktakes, the accounting ledger and budgets, side by side. For a hospitality group, it adds a Group P&L and a daily Group Trading view across the group’s venues.
Those numbers usually live in different places, cover different periods and are prepared by different people. Put side by side, the differences between them can be seen, and each one can be treated as a question to check.
What Klariti brings together
Each of these comes from a system the venue already uses. The integrations page lists every system Klariti connects to, what it reads from each and where each connection stands.
Supplier invoices
Supplier invoices come in by email and are read to line level: the products, pack sizes and prices on each invoice. When a price changes, Klariti flags it, so the change can be checked against the invoice itself rather than a remembered price.
Stocktakes
Stocktake results from Sculpture Hospitality’s system sit alongside purchases, so what was counted and what was bought can be read together.
POS sales
Daily sales from the venue’s POS, split into food and beverage using the POS’s own categories.
Purchases to Sales
Food and beverage purchases as a share of sales, between stocktakes. The figure is labelled as purchases, not food cost. Food cost needs a stock count at each end of the period, and Klariti does not present one as the other.
Theoretical food and beverage cost
Recipes applied to what sold, giving what the food and drinks sold should have cost according to those recipes: the kitchen’s recipes for food and Sculpture recipes for drinks. Each sits beside the cost counted from stocktakes, so the gap between the two can be checked.
The ledger and budgets
The accounting ledger from Xero, by month. Budgets sit beside it, with Budget vs Actual, and a Group P&L across a group’s venues.
Group Trading
For groups: yesterday’s sales for each venue against the same day last week, and the month so far against budget.
Each number, labelled for what it is
A purchases figure is called purchases. A theoretical cost is called theoretical. Sales from a POS and trading income from Xero are kept as separate figures rather than blended into one. Different figures answer different questions, and the labels are there so nobody has to guess which question a number answers.
A difference is a question. Not an accusation.
What Klariti leaves to people
Klariti shows the numbers and the differences between them. It does not decide what a difference means, and it does not promise a saving. Explaining a difference means checking the records behind it: a delivery counted in one period and invoiced in the next, stock transferred to another venue, a surcharge that an item report leaves out. That checking is done by people: the venue’s own team and, in shared and full service, Brad and Helen as well.
Who uses Klariti
The Sculpture Hospitality Gold Coast team uses Klariti in their service. Venues on the service can log in to see their figures.
Two names, one clear line
- Sculpture Hospitality Gold Coast is the service. Brad and Helen provide stocktaking, analysis and follow-through with a venue’s managers, as self-service, shared service or full service.
- Klariti is the software. It holds one view of a venue’s numbers across supplier invoices, POS sales, stocktakes, the accounting ledger and budgets.
The counts, the conversations and the follow-up come from people. Klariti keeps the numbers together and labelled. Read more about the service on the Sculpture Hospitality Gold Coast home page.
