  • Are transfers, wastage and complimentary drinks documented?
  • Do sales records cover the same period?
  • Are unresolved differences being followed up?
The important distinction

Stock used is not automatically stock sold.

Physical depletion can include sales, waste and other movements. We use supporting records to investigate the difference.

A stocktake measures stock at a point in time. Between counts, the picture depends on the available records—not a live physical measurement.

Agree count responsibilities, software access, training, review frequency, support and fees before starting. Venue-counted stock is not presented as independently counted by Sculpture. Any on-site checks or recounts are agreed as part of the scope.

Timing, transfers, wastage and recording issues can all affect the stock picture. The useful part is finding out why.

An anonymised example from our full-service work

The count raised the question. The follow-through got the bottle back.

An inventory review identified a missing bottle of champagne valued at $360. It had been loaned to another venue, but at the next review it still hadn’t returned.

Brad went with the client’s sommelier to follow it up in person. After calls to the other venue’s duty managers, the bottle was located and returned.

Finding the discrepancy was only the first step. Helping the venue resolve it was the part that mattered.
